1. Definition
Steamed Green Tea is a type of green tea that has been heat-treated with steam immediately after harvesting to stop enzymatic oxidation of the tea leaves. This steam-fixation process preserves the leaves’ green color, fresh aroma, and mild, umami-rich flavor, distinguishing it from pan-fired green teas that are roasted in a hot pan.
2. Classification
Our company classifies Steamed Green Tea into four categories: Tencha (Grades 1, 2, and 3) & Matcha (Grades 1, 2, and 3), Sencha, Houjicha, and Genmaicha.
